Need some advice regarding potential 5th year in college

Right now I am a Senior, and have been applying for a mix of internships and full time jobs.



Currently I have a Statistics major, and I will be able to graduate with a minor in Economics in the summer. I had planned for a Stats and Econ double major but I didn't plan my schedule well (wanted to do CS, then had to change because I couldn't handle the class on top of my other classes).



If I can get a full time offer at a firm that seems like a good fit, I think I would just graduate with a minor (file for graduation in the winter) and then work.



But if I can't get the offer, I would go back to school, take Summer School + extra quarter and finish with a major in Economics as well.



Does graduating in the fall affect anything in terms of recruiting or job cycles?



In interviews so far I've been telling them that I will graduate in Summer of 2015, because I feel like telling them my situation makes it look like I don't have a good plan.



What do you think I should do, and what should I tell employers?
