how much quality are you sacrificing if you buy a prime rib at costco ($8.99/lb) as opposed to a good butcher (12.99/lb, 16.99/lb, so far after calling a couple good butchers)
ETA more context: I'll be buying 12 lbs minimum, so the difference is gonna be $50-$100. Is the extra quality gained by going to a reputable butcher worth that much?
